I love making a frittata. It is super healthy, lasts a few days in the fridge and is a real crowd pleaser. I make this for a lunch or a light dinner. When I'm in a rush, I will take a slice of this to work for lunch or even eat it on the run for breakfast. The addition of greens, bumps up the nutrient profile and tastes fantastic.
