High protein cookie dough balls

high protein cookie dough balls

INGREDIENTS

1 cup oats

½ cup ANY nut butter, I use tahini (sesame seed paste) when I want to keep it nut free

2 tbsp unpasteurized honey

¼ cup vanilla protein powder

¼ cup shredded unsweetened coconut (and more for rolling the balls in - optional)

¼ cup chocolate chips or raisins

 

DIRECTIONS

  1. Mix all the ingredients together in a large bowl. Pinch off a small amount and roll into a ball about the size of a walnut.
  2. Roll into additional shredded coconut, if desired.
  3. Refrigerate and store in the fridge.

Makes about 30 balls.
